Find out what they actually learned about food in medical school and college, and why they decided to go vegan. Dr Des, a Mayo man, studied medicine at Trinity College Dublin. He has been vegan for nearly three years. Caroline Lynch is from Galway and studied nutritional therapy at the College of Naturopathic Medicine. She went vegan around 2015.
